For a cold evening, for a mopey day, or when you need that extra vit. C and mineral boost to fight a cold …or when you’re just hungry for a quick and effective healing soup.
Be sure to use only organic ingredients:
1 1/2 cup of broth (vegetable or bone broth)
2 Tbs coconut oil
1 onion
1 whole bulb of garlic
5 tomatoes
2 bell peppers
1 cup chopped mushrooms of your choice
optionally: celery, carrots, ginger
Spices: black pepper, sea salt, chili powder, oregano, turmeric
1/2 cup of chopped fresh parsley
2-3 fresh basil leaf
How to make it:
Start from slightly grilling the onion in coconut oil, add mushrooms and simmer until soft. In the meantime boil the carrots in your choice of broth until they soften a little. Add chopped bell peppers and boil for 3 min. Blend tomatoes or dice them as you prefer. Take your soup off of the stove and add the tomatoes and parsley. Add all the spices and let it settle for a couple of minutes. As you might have noticed the actual cooking time is not very long. It’s important to keep the ingredients as close to “raw” as possible in order to get the most of vitamins and minerals out of them. If you like your soup creamy (I do!!!) I recommend adding 2 table spoons of sour cream or coconut milk for a vegan/vegetarian version. Decorate with a leaf of fresh basil and enjoy the amazing taste. Prepare to heal in no time ?
